Ingredients
  • 8 eggs
  • ¼ cup almond milk
  • 2 small-sized tomatoes diced
  • 1 small onion diced
  • 1 handful of spinach leaves
  • 1 cup of feta crumbles
  • 8 sheets of filo dough
  • Olive oil spray
  • Salt and pepper to taste
Instructions
  1. Preheat oven 350
  2. In a medium bowl, whisk the eggs.
  3. Add the diced tomatoes, onions, spinach, and feta. Salt and pepper to taste.
  4. Grease an 8x8 pyrex and add one sheet of folded filo at bottom of pan. Spray with olive oil, and repeat until you use all filo sheets.
  5. Add egg mix over filo and fold edges to create crust.
  6. Bake at 350 for 30 min.
