Feta tomato spinach quiche

This feta tomato spinach quiche can also be prepared ahead of time. A delicious addition for our Mother’s Day brunch.

Ingredients
  • ½ cup crumbled feta cheese
  • 1 frozen pie crust
  • 2 garlic cloves
  • 1 tbsp olive oil
  • 2 cups spinach
  • 4 eggs
  • ⅔ cup of almond milk
  • crushed black pepper & sea salt to taste
  • 10 cherry tomatoes
  • ¼ red onion
Instructions
  1. Spread crumbled feta evenly on the bottom of pie crust.
  2. Sauté garlic with olive oil in a small frying pan. Add spinach and cook until soft.
  3. Add cooked spinach on top of feta cheese in the pie crust.
  4. In a bowl, whisk 4 eggs, almond milk, salt and black pepper together and pour mixture into pie crust over the spinach & feta.
  5. Slice cherry tomatoes and red onion, and arrange around on top of egg mixture and around pie crust.
  6. Bake at 325F for 45 minutes. Quiche should rise.
