Air fryer salmon burgers

We made these salmon burgers by using fresh salmon,  no egg, and flaxseed meal instead of breadcrumbs.   We used to food processor to grind the salmon, and we added  Dijon mustard, fresh shallots, capers and lemon juice to the mix.  Then  we cooked the salmon patties in the Air Fryer.   They are healthy, easy to make and delicious.

Ingredients
  • 1 lb. of fresh skinless, boneless salmon
  • 2Tbs. Dijon mustard
  • 2 Shallots (chopped)
  • ½ cup Flaxseed meal
  • 1 Tbs. Capers
  • 1 Tbs. Lemon juice
  • Salt & pepper to taste
  • Non-stick cooking spray
  • Lemon wedge for garnish
Instructions
  1. Cut salmon into pieces and transfer half into a food processor. Add the mustard and pulse until it forms a paste.
  2. In the food processor, add the rest of the salmon, the chopped shallots and lemon juice. Pulse on and off until everything is well combined. (No pieces of salmon should be larger than ¼ inch.
  3. Place mixture into a bowl and stir in flaxseed, capers, salt & pepper to taste. Mix well.
  4. Create 4 salmon patties and place them in the freezer for about an hour.
  5. Preheat air fryer to 400F (200c). Spray air fryer basket with non-stick spray.
  6. Place salmon burgers in the basket and spray their tops. Cook for about 8 minutes, turn burgers over, spray tops again and cook for another 7 minutes.
