A great vegetarian alternative to meatballs made with meat.
Ingredients
  • 3 medium eggplants, peeled, diced
  • 2 eggs
  • 2oz of feta cheese
  • 1 large onion diced
  • 1 Tbsp. oregano
Instructions
  1. Preparation
  2. Preheat oven to 375 F
  3. Place the diced eggplant, eggs, feta, onion and oregano in a food processor and pulse until mixture becomes a chunky, meat-like consistency.
  4. Make golf ball-size balls from the mixture, and place on a parchment lined baking sheet.
  5. Place in the preheated oven and cook for about 20-30 minutes or until the meatballs are browned on the outside and cooked through.
  6. Add meatballs to your favorite spaghetti sauce like ragu, and serve over zoodles (zucchini pasta) of choice.
Notes
Tips
You can replace zucchini noodles with regular pasta if you wish.
