Green Bean Salad with Feta

Ingredients
  • 12 oz Green beans trimmed
  • 1 Red onion chopped
  • 3-4 Tbsp. Fresh cilantro (chopped)
  • 2 Radishes thinly sliced
  • ¼ Cup crumbled feta cheese
  • 1 tsp. Fresh oregano (chopped)
  • 2 Tbsp. Red wine vinegar
  • 5 Tbsp. Extra virgin olive oil
  • 5 cherry tomatoes cut in half
  • Fresh ground pepper
Instructions
  1. Steam green beans for about 5 minutes.
  2. Transfer beans to a bowl and add the onion, cilantro, radishes, crumbled feta and oregano.
  3. Add pepper to taste.
  4. Whisk the vinegar and olive oil together and then pour over the salad. Toss and mix well.
  5. Transfer to a serving platter, add tomato wedges and chill till ready to serve.
