Banana bread french toast bake is great for breakfast or brunch.  You can substitute the banana bread for any crusty bread of your choice.

Banana Bread French toast bake
Ingredients
  • • ¼ cup butter
  • • 1 cup brown sugar
  • • 1 loaf Banana bread, sliced 1" thick
  • • 4 eggs, beaten
  • • 1¼ cup of almond milk
  • • 2 tsp. vanilla
  • • ¼ tsp. salt
  • • Prep Time: 15 minutes
  • • Cook Time: 33 minutes
  • • Total Time: 48 minutes
  • • Yield: Serves 6-7
Instructions
  1. Spray a 9" x 13" pan with nonstick baking spray .
  2. Mix together ¼ cup of milk, butter, and brown sugar in a small saucepan stirring frequently and simmer until the sugar has melted.
  3. Pour this mixture into prepared pan.
  4. Place the banana bread slices over the sugar-butter mixture in the dish. In large bowl, beat together the eggs, the other 1 cup of almond milk, vanilla, and salt; pour this mixture over the bread.
  5. Cover the baking dish and refrigerate overnight.
  6. The next morning, preheat oven to 350 degrees. Uncover the pan and bake for 30-40 minutes until golden brown and bubbly. Remove from baking dish and serve while hot or warm.
  7. Serve with honey.
