Sweet potato hash

We love sweet potatoes made all kinds of different ways. Sweet potato hash is a great addition to our breakfasts and lunch menus.

Ingredients
  • 2 Tbsp. olive oil
  • 4 cups diced sweet potatoes
  • 2 red bell peppers, diced
  • 4 thinly sliced scallions, whites and greens separated
  • 1½ tsp. minced fresh rosemary
  • Sea Salt to taste.
Instructions
  1. Over medium heat use a large skillet to heat the oil.
  2. Add sweet potatoes, peppers and scallion whites, and season.
  3. Cover and cook until potatoes are tender and begin to brown, about 8-10 minutes.
  4. Uncover and add the scallion greens and rosemary.
  5. Cook stirring often about 3-4 minutes or until potatoes are done to your liking.
