Cauliflower mashed potato

Cauliflower mashed potato, is a great substitute for those of us who try to avoid starches, yet crave the consistency of a mashed potato. It is a great way to turn this nutritious calciferous vegetable into a delightful side dish. Cauliflower is known for its health benefits ,it contains phytonutrients and has been linked to many cancer prevention diets.

Recipe type: Fruits and Vegetables
Ingredients
  • 1 large head of cauliflower
  • 5 large cloves of garlic
  • 2 Tbsp. of olive oil
  • ¼ of cup almond milk (optional)
  • ¼ of tsp. of nutmeg
  • ¼ of Sharp shredded cheddar cheese for garnish
Instructions
  1. Clean and cut the cauliflower into florets.
  2. Steam or boil the florets with the garlic until tender.
  3. Transfer to a food processor and puree until smooth.
  4. Add olive oil, and slowly add almond milk to reach the desired consistency, of your individual taste.
  5. Add salt and pepper to taste.
  6. Before serving, top with nutmeg & cheddar to garnish
Notes
Makes a great side dish, and a great substitue for mashed potato.
