Squash soup

Squash soup is a dish that we love to make often.

 

Coconut, ginger, squash soup

Ingredients
  • 1 large butternut squash
  • 1 tbsp olive oil
  • 4-5 cloves of garlic
  • 1 onion
  • 1 inch of fresh ginger
  • 1 (16oz can of coconut milk
  • 1 lime (juiced)
  • 2-4 cups of chicken broth (enough to cover the squash)
Instructions
  1. Peel and cut squash into large cubes
  2. Dice garlic and onion.
  3. In a large pot saute garlic, onion, & olive oil until translucent.
  4. Add squash, toss to coat.
  5. Add chicken stock and bring to a boil.
  6. Simmer for about 30 minutes until squash is tender.
  7. Puree with immersion blender or food processor.
  8. Add the coconut milk lime, salt and pepper to taste.
