This lentil soup recipe is one of our favorites. We make it often because we like it so much

Ingredients
  • 16 cups of water
  • 1 lb (16oz) lentils
  • 1 tbs olive oil
  • 5 cloves of garlic
  • 10 oz can tomato paste
  • 2 tbsp oregano
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp of olive oil
  • Balsamic vinegar (optional)
Instructions
  1. Remove small stones and debris from lentils.Place in a strainer and rinse them thoroughly under cool water. No soaking necessary.
  2. In a large saucepan over medium heat add water and bring to a boil.
  3. Add lentils,garlic, tomato paste,oregano,bay leaf, salt & pepper to taste and simmer.
  4. When lentils are done, and got your desired soup consistency add olive oil.
  5. When serving, add balsamic vinegar (optional)
Notes
Lentils are easy & quick to prepare, they taste great,and have a number of health benefits. They help lower cholesterol, are good for the heart, and they provide a good amount of seven important minerals, B vitamins and protein with almost zero fat.
