Pumpkin pie

This is a Greek pumpkin pie that tastes good, and it is  made with filo dough.

Ingredients
  • 2 tbs olive oil
  • 1 medium onion diced
  • 2 cups of shredded fresh pumpkin , or 1lb 15 oz pumpkin puree
  • 1 egg
  • 1 tsp pepper
  • Salt to taste
  • A pinch of sugar
  • ½ stick butter melted
  • 1 lb phyllo dough room temperature
Instructions
  1. Preheat oven to 350 degrees
  2. Heat olive oil over medium heat, and saute the diced onions till translucent
  3. In a large mixing bowl, put the pumpkin pure, the cooked onions, egg, salt, pepper,sugar, and mix well.
  4. Grease the bottom of a baking pyrex (we used an 8x10 pan)
  5. Unroll phyllo and layer one sheet and brush with melted butter.Repeat until you have about 5-6 sheets total
  6. Spread ½ of the pumpkin mix evenly into the pan and repeat the layering process as above, with butter and 6 more sheets plus puree once more. Top with another 6 sheets
  7. Bake for about 40 minutes or until golden brown.
  8. Let cool before cutting.
