Ingredients
  • 2 Boneless chicken breasts
  • 3 large potatoes, peeled & quartered
  • 10 baby carrots
  • 1 tsp. dried oregano
  • 1 tsp. fresh chopped thyme
  • Sea salt to taste
  • The juice of 1 lemon
  • 1 tsp. Lemon zest
  • ½ cup extra virgin olive oil
  • ½ cup white wine
  • 6 cloves of garlic
  • Fresh ground pepper to taste
Instructions
  1. Preheat oven to 375 degrees.
  2. Place chicken, potatoes, and carrots in a roasting pan. Season with oregano, thyme, salt & pepper. Add the zest of half a lemon and half of the lemon juice.
  3. In a blender, place wine, oil, garlic and the other half of the lemon juice, and blend, until the liquid appears white.
  4. Pour wine-oil mix all over the pan and mix well.
  5. Place in the oven and bake for about 50 minutes. Make sure the chicken is cooked through and they has a roasted brown color.
  6. Allow 10 minutes to cool before serving.
