Melomakarona

Ingredients
  • For cookies
  • 4-6 oranges & orange peel
  • 1 ½ cups orange juice (the juice of about 4 oranges)
  • 1 tsp. baking soda
  • 4 ½ cups of grapeseed oil
  • 1 ½ cup sugar
  • 1 ½ tsp. baking powder
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. ground cloves.
  • 9 cups of all -purpose flour (about 41/2 lbs)
  • For the syrup
  • 2 cups water
  • 2 cups honey
  • 1cup sugar
  • 1 cinnamon stick
  • 4 whole cloves
  • 1½ cups of finely chopped walnuts
Instructions
  1. For cookies
  2. Preheat oven to 350F and zest 6 oranges.
  3. Dissolve baking soda in orange juice.
  4. In a blender, put oil, sugar, baking powder, cinnamon, nutmeg, and ground cloves and blend well. Let the oil mix rest for a few minutes.
  5. In a large bowl, add nine cups of flour, orange zest, orange juice, and the oil mix. Mix all ingredients and knead dough. Create oval or round shapes and mark each cookie with a fork on the top. The fork grooves, will allow the chopped walnuts to stick, after they are dipped in the syrup.
  6. Bake until cookies look brown, and start to smell.
  7. When cookies are ready, set aside and allow to cool and prepare syrup.
  8. For Syrup
  9. In a large pot, put all of the above ingredients (except walnuts), and bring to a boil over medium heat.
  10. Turn heat down to low, then scoop & discard the foam that has risen to the top.
  11. In the hot syrup, place as many cookies as can fit in the bottom of the pot, and hold them down with a spatula for about a minute. (if you want them less moist, reduce this time)
  12. Use a slotted spoon to remove cookies from pot, place on baking sheet lined with aluminum foil so they can drip.
  13. Immediately sprinkle the chopped walnuts on each and allow them to cool completely before you transfer into a serving platter.
