Goat cheese egg croissant

Ingredients
  • 3 whole organic eggs (whisked)
  • ½ cup baby spinach (washed)
  • 1 tbsp goat cheese
  • Olive oil no stick spray
  • Salt & pepper to taste
Instructions
  1. Spray a non-stick pan with 100% extra virgin olive oil no-stick spray over medium heat.
  2. In a bowl, whisk the 3 eggs until fluffy. Add salt and pepper
  3. Pour eggs into the pan and allow them to cook thoroughly on both sides.
  4. Place spinach & goat cheese on one half of the omelet and fold the opposite side over.
  5. On a serving plate, split a large croissant in two and place the omelet in it. Cut in half and serve with fruit of choice.
