Ingredients
- 3 whole organic eggs (whisked)
- ½ cup baby spinach (washed)
- 1 tbsp goat cheese
- Olive oil no stick spray
- Salt & pepper to taste
Instructions
- Spray a non-stick pan with 100% extra virgin olive oil no-stick spray over medium heat.
- In a bowl, whisk the 3 eggs until fluffy. Add salt and pepper
- Pour eggs into the pan and allow them to cook thoroughly on both sides.
- Place spinach & goat cheese on one half of the omelet and fold the opposite side over.
- On a serving plate, split a large croissant in two and place the omelet in it. Cut in half and serve with fruit of choice.
