Chicken Souvlaki

Chicken Souvlaki

Ingredients
  • 4 large boneless, skinless organic chicken breasts (cut into 1-1/2 inch cubes)
  • 3 cloves of garlic (minced)
  • ¼ cup olive oil
  • ¼ cup dry white wine
  • 1 lemon (juiced + zest)
  • 2 tsp. fresh oregano leaves chopped
  • 1 tsp. fresh basil chopped
  • Sea salt and fresh ground pepper to taste
Instructions
  1. Soak bamboo skewers for at least half an hour.
  2. In a zip-loc bag, combine (garlic, olive oil, wine, lemon juice, lemon zest, oregano, basil, salt, pepper and shake to mix ingredients. Add the chicken.
  3. Seal the bag, and shake again to coat the chicken with the oil mix.
  4. Place bag in the fridge and allow chicken to marinade (At least 2 hours, or overnight if possible)
  5. Thread each skewer with pieces of chicken living one inch of the skewer exposed at the top.
  6. Season with additional salt & pepper if necessary, and grill until chicken is well cooked.
