Shrimp Cocktail

Shrimp cocktail is a light appetizer and easy to make. This week, we got some nice jumbo shrimp and decided to make a variety of dishes, such as this shrimp cocktail, Gambas al ajillo – shrimp in garlic sauce, and scrimp scampi

Shrimp Cocktail

Ingredients
  • 2 lb large shrimp, shelled, tails intact, deveined
  • 5 whole peppercorns
  • 2 tsp salt
  • Cocktail sauce
  • 1 cup ketchup
  • 1 Tbs each dark-brown sugar, minced shallots and prepared horseradish
  • ½ tsp grated lime zest
  • ¼ tsp freshly ground black pepper
  • 1 tsp fresh lime juice
  • 8 drops hot red-pepper sauce
  • Pinch of salt
  • Ice
  • Lime wedges
Instructions
  1. Prepare 4 hours before serving:
  2. Over high heat, in large saucepan, heat 4 cups of water, with the salt and peppercorns, and bring to a boil.
  3. Add shrimp and cook for about 21/2 minutes, or until barely cooked.
  4. Drain immediately.
  5. Place shrimp in a bowl of ice and water to stop cooking and cool.
  6. Drain, cover and chill.
  7. In another bowl, mix sauce ingredients.
  8. Line a platter with ice; top with shrimp and lime wedges, and serve with sauce
