Chicken salad lettuce wrap

We made the chicken salad with  a nice Mediterranean twist to it.  The chicken salad can be made in advance and it is great for school lunch or lunch with friends.   It can be served by itself, or inside a wrap. We used lettuce wraps as a healthier alternative. Just add a  desired amount of chicken salad into the lettuce leaf, wrap it up and enjoy!

Chicken salad lettuce wrap
Ingredients
  • 2 cups cooked chicken breasts (grilled or boiled)
  • ½ cup green apples cubed
  • ½ cup grapes halved
  • ½ onion diced
  • ½ tsp. basil
  • 1 lemon zest & juice
  • 2 Tbsp. Veganese Mayo
  • 2 tsp. Dijon mustard
  • Sea salt & pepper to taste
  • Slivered almonds (optional)
  • A round head of lettuce to be used as wraps (optional)
Instructions
  1. Cut the cooked chicken breasts into cubes, place in a bowl.
  2. Add the apples, grapes, onion, basil, lemon zest and lemon juice and mix. Add almonds (optional)
  3. Mix the Dijon with the mayo, add to the bowl and mix until everything is well coated.
  4. Sprinkle salt and pepper to taste.
  5. Wash lettuce and separate leaves. Add desired portion of chicken salad into each lettuce leaf, and wrap.
