Chicken with Orzo (Youvetsi)

Chicken with orzo (Youvetsi) is one of our favorite foods We make it often, and for variation we make the same recipe with lamb.

Ingredients
  • 6 Large boneless chicken breasts or thighs
  • 6 Large, very ripe tomatoes
  • 1 Tbsp. Tomato paste
  • 4-5 Cloves of garlic minced
  • ½ Cup of olive oil
  • 4 cups of water
  • 1 lb. Orzo
  • Sea salt & fresh ground pepper
  • Grated Parmesan cheese
Instructions
  1. Preheat oven to 350 F
  2. Place chicken in baking pan. Add salt, pepper.
  3. Puree the tomatoes, add tomato paste, oil, garlic, a little bit of water, and mix together. Pour tomato sauce over the chicken.
  4. When the chicken is done, remove from the oven and set aside.
  5. In the same pan, add four cups of hot water and some pepper and stir. Raise the oven temperature to 400 F.
  6. When the water in the pan starts to boil, add the orzo and allow it to cook for about 5 minutes.
  7. Turn the oven off , and place chicken back in the pan. Allow the orzo to cook until it is done, and liquid is absorbed, stirring occasionally.
  8. Serve with grated Parmesan.
