Pesto

There is nothing like making pesto with fresh ingredients such as basil from the garden. We use this delightful sauce with pasta, on sandwiches as a spread, on eggs e.t.c.  For variation, we replace the basil for dill and the pine nuts for cashews.

Ingredients
  • 2 Garlic clove
  • ½ cup pine nuts
  • Pinch of salt
  • 3 Cups fresh basil leaves
  • ½ cup extra virgin olive oil
  • ½ cup Freshly grated Parmesan cheese
Instructions
  1. Place garlic, pine nuts and a large pinch of salt into a food processor or blender and process briefly.
  2. Add the basil leaves and process to a paste.
  3. With the motor still running, gradually add the olive oil.
  4. Scrape into a bowl and beat in the Parmesan cheese.
  5. Season to taste with salt.
