Spaghetti squash stuffed with spinach & feta

Ingredients
- 1 large spaghetti squash
- 2 tbsp. of olive oil
- 3 minced cloves of garlic
- 4 cups of fresh organic baby spinach
- Salt and pepper to taste
- 1 cup of feta crumbles
- ¼ cup of sharp cheddar cheese
Instructions
- Poke holes in the squash to let the steam out, and microwave for a total of 12 minutes, rotating squash every 4 minutes.
- Meanwhile, heat oil in a large skillet over medium heat.
- Add minced garlic, and cook for a couple of minutes stirring frequently.
- Add spinach and cook until tender.
- When the squash is ready and soft, cut in half. Use a fork to scrape the squash from the shells and add it to the spinach mix.
- Mix spinach & squash together, add ½ of the feta, salt and pepper to taste, and divide between the shells.
- Stuff the empty shells with the mix.
- Add feta crumbles and some cheddar on the top of each shell, and place shells in a broiler safe baking dish.
- Bake at 350 for 10 minutes then turn broiler on high until the top is brown. About 2-3 minutes, keeping a close eye on the broiler.
