Pesto
There is nothing like making pesto with fresh ingredients such as basil from the garden. We use this delightful sauce with pasta, on sandwiches as a spread, on eggs e.t.c. For variation, we replace the basil for dill and the pine nuts for cashews.
Pesto

Ingredients
- 2 Garlic clove
- ½ cup pine nuts
- Pinch of salt
- 3 Cups fresh basil leaves
- ½ cup extra virgin olive oil
- ½ cup Freshly grated Parmesan cheese
Instructions
- Place garlic, pine nuts and a large pinch of salt into a food processor or blender and process briefly.
- Add the basil leaves and process to a paste.
- With the motor still running, gradually add the olive oil.
- Scrape into a bowl and beat in the Parmesan cheese.
- Season to taste with salt.
