Baked Falafel

Baked Falafel

Ingredients
  • FOR FALAFEL
  • 1½ c. canned chickpeas, drained & rinsed
  • 4 Tbsp flour (wheat, flax etc)
  • 1 c. parsley
  • 1-2 Tbsp tahini
  • 1 garlic clove
  • 1 Tbsp olive oil + 2 Tbsp for baking
  • 1 tsp. cumin
  • Salt & Pepper
  • FOR GARLIC SAUCE[
  • 2 Tbsp tahini
  • ¼ c. water
  • 1 lemon
  • 1 garlic clove
  • 1 tsp. honey
  • ½ c chopped cucumber
Instructions
  1. FOR FALAFEL
  2. Combine all ingredients in a food processor. Once combined, take small pieces of the mix, and roll into little balls.
  3. Add 2 Tbsp olive oil on a baking tray & place falafel balls on to it. Put tray in the oven and rotate falafel balls every few minutes to ensure cooking all around & to prevent burning.
  4. When done, falafel should be golden brown & semi-solid inside. Place on plate with paper towel to absorb any extra oil.
  5. ]FOR GARLIC SAUCE
  6. Blend all other ingredients without cucumbers.
  7. Add chopped cucumber to mix & blend well.
  8. Use over warm falafel or use Tzatziki sauce
Notes
Serve with baked pita, baked chickpeas, arugula, diced tomatoes, thinly sliced red onion. We made a nice pita & falafel sandwich and added all of the above inside, including the sauce.
