Mother’s Day Brunch

Our Mother’s Day Brunch

Their values shape our worldview, and their love always provides a safe harbor in an ocean of insecurity.  Mother’s are the super glue that holds the family together.”

We wanted to make Mom feel special so we created this special brunch, and here is how we did it.

First, we planned ahead and got Mom her favorite flowers. She loved not only how they looked, but also how they smelled.
Coffee and Berries
We served Mom coffee in bed. We used one of her gifts to serve it.

…..and we created a Mother’s Day Menu full of delicious surprises
The table
We cut some beautiful heliconias from our garden and used them as the centerpiece to brighten the table.
Berries and Orange juice
Squeezed fresh oranges to make orange juice.

We made a Salmon- feta -quiche, and a feta -tomato- spinach quiche with fresh herbs and tomatoes from the garden.

Salmon Feta Quiche

Smoked Salmon & Feta Quiche • ½ cup crumbled feta cheese • 1 frozen pie crust • 4 eggs • 2/3 c milk • 1/4 package of smoked salmon • 1/4 cup fresh chopped parsley • Sea salt and black pepper to taste 1. Spread crumbled feta cheese across bottom of pie -crust. 2. In a bowl, whisk together the eggs, milk, salt and black pepper. 3. Slice smoked salmon into small strips. 4. Chop parsley leaves into small pieces. 5. Add both the salmon strips and chopped parsley to egg mixture and pour together into the pie -crust over the feta cheese. 6. Sprinkle extra feta, and add more parsley and salmon for garnish on top. 7. Bake at 325F for 45 minutes.

Feta tomato spinach quiche

Feta tomato spinach quiche
Feta tomato spinach quiche 1/2 cup crumbled feta cheese, 1 frozen pie crust, 2 garlic cloves,1 tbsp olive oil, 2 cups spinach, 4 eggs 2/3 cup of almond milk, crushed black pepper & sea salt to taste, 10 cherry tomatoes, 1/4 red onion. Sauté garlic with olive oil in a small frying pan. Add spinach and cook until soft. Add cooked spinach on top of feta cheese in the pie crust. In a bowl, whisk 4 eggs, almond milk, salt and black pepper together and pour mixture into pie crust over the spinach & feta. Slice cherry tomatoes and red onion, and arrange around on top of egg mixture and around pie crust. Bake at 325F for 45 minutes. Quiche should rise.

Chocolate-Blueberry pancakes

Then, we made chocolate chip and blueberry pancakes. To make the pancakes we used a good pancake mix, (our choice was gluten free) we added some chocolate chips and blueberries to the batter to make it special, and made all of our pancakes dollar size except one. We shaped it into a big heart just like Mom’s.

Chocolate croissants
Also, we made chocolate croissants, and chocolate dipped strawberries.For the chocolate croissants, we bought ready-made Pillsbury jumbo croissant dough, unfolded the dough and separated the triangles. We added chocolate chunks in each triangle, and followed the baking instructions of the package. About 15 minutes in the oven. For the chocolate dipped strawberries we used 1 cup of semi sweet dark bakers chocolate chunks combined with 1 tablespoon of coconut oil. We placed the chocolate and coconut oil in a double boiler, and melted over the stove. We dipped the strawberries and set aside to cool. Keep the chocolate smooth by adding more coconut oil if you need to.

When we were ready, we put all of our master creations on the table. We used Heliconia leaves from the garden to make a Happy Mother’s Day card. Everything turned out perfect! Mom was surprised and very happy. What a great mother’s day!
