Ingredients
  • 1 lb. unsalted butter (4 sticks)
  • 8 Tbsp. confectioners sugar+ additional sugar for dusting or rolling
  • 4 Tbsp. pure almond extract
  • 1 cup blanched almonds chopped coarsely (roasted)
  • 4 cups of all-purpose flour
Instructions
  1. Preheat oven to 350 F.
  2. Roast, cool, & then coarsely chop the almonds.
  3. In a large bowl, cream together butter, sugar and almond extract.
  4. Fold in flour & almonds, and form a large dough ball. Place in the fridge for about 30 minutes.
  5. Lightly dust a clean surface with flour so the dough doesn't stick while you work shaping the cookies into 1 inch balls or use cookie cutters to create Christmas shapes.
  6. Place cookies on ungreased cookie sheet, and bake for about 20 minutes or so, or until they are nice and brown.
  7. Remove from oven, set aside to cool.
  8. Put some powder sugar on a plate, and roll each cookie in it. If you choose to make Christmas shapes, dust the powder sugar over the cookies so they don't break.
Notes
You can dust the top of the cookies with the powder sugar or wait till they cool completely and roll them in the sugar.
