Cauliflower rice

Cauliflower rice

Ingredients
  • 1 head of cauliflower core removed
  • 2 tbsp coconut oil
  • 1 small onion (chopped)
  • 1 cup chopped broccoli florets
  • 4 garlic cloves minced
  • 1 cup chicken broth
  • ¼ dried oregano
  • ½ tsp of curry powder
Instructions
  1. In a food processor with a grating blade, grate cauliflower, or use a cheese grater if you don’t have one.
  2. Chop broccoli
  3. In a large sauté pan heat the coconut oil.
  4. Add the chopped onion, garlic and broccoli florets and sauté for about 4-5 minutes or until soft.
  5. Add the cauliflower and keep stirring to coat with the oil well.
  6. Add the chicken broth, oregano, curry and sauté for another 10-15 minutes or until all the liquid is absorbed.
  7. Remove from stove and serve as a side dish.
