Ingredients
- 8 eggs
- ¼ cup almond milk
- 2 small-sized tomatoes diced
- 1 small onion diced
- 1 handful of spinach leaves
- 1 cup of feta crumbles
- 8 sheets of filo dough
- Olive oil spray
- Salt and pepper to taste
Instructions
- Preheat oven 350
- In a medium bowl, whisk the eggs.
- Add the diced tomatoes, onions, spinach, and feta. Salt and pepper to taste.
- Grease an 8x8 pyrex and add one sheet of folded filo at bottom of pan. Spray with olive oil, and repeat until you use all filo sheets.
- Add egg mix over filo and fold edges to create crust.
- Bake at 350 for 30 min.
