Ingredients
  • 4 cups chopped peeled ripe tomatoes (about 4 large tomatoes
  • 4 cups of low sodium V8 juice
  • ⅓ cup chopped fresh basil leaves
  • 2 cups low sodium organic chicken stock
  • 1 cup Greek yogurt
  • Salt & Pepper to taste
Instructions
  1. Put the tomatoes and tomato juice in a large pot and bring to a boil.
  2. Reduce heat and simmer uncovered for about 30 minutes
  3. Set a few basil leaves aside for garnish, and put the rest of the basil In a blender or a food processor along with the tomato mix and process until smooth.
  4. Place back in the pot and add the chicken stock, salt and pepper if necessary to taste.
  5. Add the yogurt, and stir well with a whisk.
  6. Cook over medium heat until soup thickens to your taste. Serve garnished with a few basil leaves.
