Ingredients
- 4 cups chopped peeled ripe tomatoes (about 4 large tomatoes
- 4 cups of low sodium V8 juice
- ⅓ cup chopped fresh basil leaves
- 2 cups low sodium organic chicken stock
- 1 cup Greek yogurt
- Salt & Pepper to taste
Instructions
- Put the tomatoes and tomato juice in a large pot and bring to a boil.
- Reduce heat and simmer uncovered for about 30 minutes
- Set a few basil leaves aside for garnish, and put the rest of the basil In a blender or a food processor along with the tomato mix and process until smooth.
- Place back in the pot and add the chicken stock, salt and pepper if necessary to taste.
- Add the yogurt, and stir well with a whisk.
- Cook over medium heat until soup thickens to your taste. Serve garnished with a few basil leaves.
