Ingredients
- 2 Tbsp. olive oil
- 4 cups diced sweet potatoes
- 2 red bell peppers, diced
- 4 thinly sliced scallions, whites and greens separated
- 1½ tsp. minced fresh rosemary
- Sea Salt to taste.
Instructions
- Over medium heat use a large skillet to heat the oil.
- Add sweet potatoes, peppers and scallion whites, and season.
- Cover and cook until potatoes are tender and begin to brown, about 8-10 minutes.
- Uncover and add the scallion greens and rosemary.
- Cook stirring often about 3-4 minutes or until potatoes are done to your liking.
