Souvlaki
Souvlaki is a generic term used to describe different meats cooked on skewers. Traditionally, Greek souvlaki is made from marinated pork or lamb, but beef and chicken have also become popular. It is served with vegetables, rice, or pita bread.

Souvlaki made with pork tenderloin
Ingredients
- 2 lbs. pork tenderloin cut into 1-inch cubes
- ½ cup olive oil
- 1 lemon Juiced
- 4 cloves of garlic crashed
- 2 Tbs. dried oregano
- 1 tsp. garlic powder
- Salt & pepper to taste
- Zest of one lemon
- Pita bread
- Sliced tomatoes and onions for garnish (optional)

Instructions
- Prepare pork tenderloin.
- Soak 10-12 bamboo sticks in water for about 15 minutes so the skewers don't burn on the grill.
- In a medium bowl, whisk together the olive oil, lemon juice and garlic. Add the cubed meat.
- Add the oregano, garlic powder, salt and pepper and lemon zest. Stir all ingredients to coat meat.
- Cover bowl and refrigerate for a couple of hours.
- Preheat grill to 400F
- Insert 4-5 cubes of meat into each skewer and cook on grill for about 20 minutes or so, turning frequently until desired doneness is achieved.
- Remove from grill and squeeze some lemon. Serve over pita or rice.
- Use tomatoes & onions for garnish. (optional)
