Today  is Halloween and we are making some nice treats for the kids.  This Delicious pumpkin and chocolate cupcake recipe its easy and fun to make.

Ingredients
  • 1 ¾ cups canned pumpkin
  • ¾ cup sugar
  • ¾ packed brown sugar
  • ½ cup unsweetened applesauce
  • ⅓ cup grapeseed oil
  • 2 large eggs
  • 2 egg whites
  • 2⅔ cups all purpose flour
  • 2 tsp. baking powder
  • 2 tsp. ground cinnamon
  • 1 tsp. baking soda
  • 1 tsp. salt
  • ¼ tsp. ground nutmeg
  • ¼ tsp. ground cloves
  • Dark chocolate frosting
  • Sprinkles
Instructions
  1. Preheat oven to 350F.
  2. Use a large bowl to beat all the wet ingredients (pumpkin, sugars, applesauce, oil, eggs, and egg whites). Set aside.
  3. Use another bowl and combine all the dry ingredients(flour, baking powder, cinnamon, baking soda, salt, nutmeg, and cloves).
  4. Slowly blend dry ingredients into the pumpkin mix until smooth.
  5. Use cupcake liners in the muffin pans and fill each cup two thirds of the way. Bake at 350 for 15-20 minutes or check with a toothpick to make sure the center is done.
  6. Allow cupcakes to cook in the pan, then remove to wire rack and allow to cool completely.
  7. Frost cupcakes and decorate with sprinkles.
Notes
These cupcakes are great Halloween treats. Get the kids involved and have fun with the decorations.
