Ingredients
- 16 cups of water
- 1 lb (16oz) lentils
- 1 tbs olive oil
- 5 cloves of garlic
- 10 oz can tomato paste
- 2 tbsp oregano
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp of olive oil
- Balsamic vinegar (optional)
Instructions
- Remove small stones and debris from lentils.Place in a strainer and rinse them thoroughly under cool water. No soaking necessary.
- In a large saucepan over medium heat add water and bring to a boil.
- Add lentils,garlic, tomato paste,oregano,bay leaf, salt & pepper to taste and simmer.
- When lentils are done, and got your desired soup consistency add olive oil.
- When serving, add balsamic vinegar (optional)
