Koulourakia-Greek Easter cookies

Koulourakia- These Greek Easter cookies are fun and easy to make. Every Easter, we make both Koulourakia and Tsoureki, and  enjoy gathering around the table as we get creative with  the dough shapes. This year, with the koulourakia dough, besides the traditional twists, we also made Easter bunnies. We like this recipe not only because it tastes good but because it makes a lot of cookies, enough  to eat, and to share with friends and family.

Ingredients
  • 2 lbs. of fresh unsalted butter room temperature
  • 3 cups of sugar
  • 8 eggs + 1 egg for the egg wash
  • 6 oz. orange juice
  • The zest of 2 oranges
  • 2 tsp. of vanilla extract
  • 10 cups of flour (about 5 pounds)
  • 2 tsp. of baking soda
  • 4 tsp. of baking powder
  • ½ tsp of cinnamon
Instructions
  1. In a large bowl, cream butter, sugar, eggs, orange juice, orange zest and vanilla extract together.
  2. Add all dry ingredients. (Flour, baking soda, baking powder) and mix well.
  3. Cover the cookie dough and set aside for 30 minutes.
  4. To make the cookies:
  5. Use a clean working kitchen surface, and use an ice-cream scoop to cut balls out of the dough.
  6. Roll out the dough ball to about ½ inch thickness to create a rope. Fold the rope in half and twist, or give the cookies any shape of your choice.
  7. Line your baking trays with parchment paper, and place the cookies by leaving enough space between them to rise.
  8. Prepare the egg wash by whisking lightly the egg and the cinnamon. Brush the egg wash on all cookies before baking.
  9. Preheat oven to 325 F and bake for about 25 to 30 minutes until golden on the top.
