Ingredients
- ½ cup crumbled feta cheese
- 1 frozen pie crust
- 2 garlic cloves
- 1 tbsp olive oil
- 2 cups spinach
- 4 eggs
- ⅔ cup of almond milk
- crushed black pepper & sea salt to taste
- 10 cherry tomatoes
- ¼ red onion
Instructions
- Spread crumbled feta evenly on the bottom of pie crust.
- Sauté garlic with olive oil in a small frying pan. Add spinach and cook until soft.
- Add cooked spinach on top of feta cheese in the pie crust.
- In a bowl, whisk 4 eggs, almond milk, salt and black pepper together and pour mixture into pie crust over the spinach & feta.
- Slice cherry tomatoes and red onion, and arrange around on top of egg mixture and around pie crust.
- Bake at 325F for 45 minutes. Quiche should rise.
