Chickpeas burgers are a great vegetarian alternative to meat burgers and very easy to make.

Ingredients
  • 19 oz. can chickpeas rinsed
  • 4 scallions
  • 1 organic egg
  • 1 Tbsp. fresh oregano (chopped)
  • ½ tsp. ground cumin
  • ¼ tsp. salt
  • 2 Tbsp. olive oil
  • 2 6-inch whole-wheat pitas
  • For the sauce
  • ½ cup plain non-fat Greek yogurt (organic)
  • 2 Tbsp. tahini
  • 1 Tbsp. lemon juice
  • ⅓ cup parsley, (chopped)
  • ¼ tsp. salt
Instructions
  1. In a food processor, place chickpeas, scallions, egg, flour, oregano, cumin, and salt.
  2. Pulse and pause a couple of times to scrape the sides until a coarse mixture forms that holds together to form patties.
  3. Form 4-5 patties, and In a large skillet heat the oil over medium-high heat.
  4. Cook the patties until golden and crisp on the outside. About 4-5 minutes.
  5. Flip them over and cook the other side until golden and crisp.
  6. To make the sauce, in a medium bowl combine the yogurt, tahini, lemon juice, parsley, salt, and mix well.
  7. Place patties on plates and serve with sauce and pita bread.
