During our visit to London one cold night, we decided to make a hearty meal and Chicken Cacciatore came to mind. This is our recipe.

Chicken Cacciatore
Ingredients
- 4 large chicken breast cut in strips
- 3 Tbsp. Olive oil
- 1 large red bell pepper cut in strips
- 1 large yellow pepper cut in strips
- 1 large onion chopped
- 1 cup button mushrooms quartered
- 4 cloves of garlic diced
- ½ cup dry white wine
- 1 (24 oz) can of zesty & spicy pasta sauce
- 1 cup reduced sodium chicken broth
- 2 tsp. dried oregano
- ½ cup fresh basil leaves coarsely chopped (for garnish)
- Sea Salt & Fresh ground pepper
Instructions
- In a large saucepan, heat the oil over medium heat.
- Add the chicken strips and sauté until brown, about 5-6 minutes on each side. Add some salt and pepper on the chicken.
- Remove chicken from the pan and set aside.
- In the same pan, add the chopped peppers, onion and garlic, and sauté until the onions and peppers are tender. Then add the mushrooms.
- Sprinkle some salt & pepper, add the oregano and wine.
- Cook until the wine is reduced to half. Then, add the tomato sauce, and chicken broth.
- Place the chicken strips back in the pan and stir them in the sauce until they are fully covered.
- Simmer over medium heat until chicken is cooked through and sauce reaches the desired thickness.
- Place in serving bowl, and garnish with the fresh chopped basil.
