Baked eggs in avocado

Ingredients
  • 1 Avocado
  • 2 eggs
  • ⅓ lemon zest
  • A pinch of Himalayan pink salt
  • A pinch of fresh ground Black pepper
  • A drizzle of Olive oil
Instructions
  1. Preheat oven to 360 F
  2. Cut the avocado in half, and remove the seed. Use a spoon to enlarge the hole to fit the egg
  3. if that is necessary.
  4. Place the avocado halves on a baking tray. ( Make sure they don't wobble.)
  5. Crack an egg into each hole.
  6. Season with salt and pepper and bake for about 15-20 minutes or until the eggs are cooked.
  7. Remove from the oven, transfer to plates and sprinkle with the lemon zest and a drizzle of oil.
  8. Eat immediately.
