Ingredients
- 1 Avocado
- 2 eggs
- ⅓ lemon zest
- A pinch of Himalayan pink salt
- A pinch of fresh ground Black pepper
- A drizzle of Olive oil
Instructions
- Preheat oven to 360 F
- Cut the avocado in half, and remove the seed. Use a spoon to enlarge the hole to fit the egg
- if that is necessary.
- Place the avocado halves on a baking tray. ( Make sure they don't wobble.)
- Crack an egg into each hole.
- Season with salt and pepper and bake for about 15-20 minutes or until the eggs are cooked.
- Remove from the oven, transfer to plates and sprinkle with the lemon zest and a drizzle of oil.
- Eat immediately.
