Baked chicken with pumpkin
Got to love pumpkins from the garden. This week, we got a big pumpkin the size of a watermelon so we put it to good use by making baked chicken with pumpkin for dinner.

Ingredients
- For the Chicken marinade
- ½ cup of olive oil
- 3 cloves of garlic
- 1-juiced lemon
- Salt & pepper to taste
- ¼ of a cup of oregano
- ------
- 4 boneless skinless chicken breasts
- 5 cups of cubed pumpkin
- 2 cups of chopped broccoli
- ½ cup of olive oil
- 2 lemons juice
- 2 cloves of garlic
- ¼ cup of dry oregano
- Sea salt and fresh ground black pepper
Instructions
- First, prepare the marinade for the chicken by putting all ingredients for the marinade in the blender. Blend thoroughly.
- Place chicken breasts in a large Zip-Lock bag. Add the marinade from the blender. Make sure you shake the bag once or twice to coat the chicken. Place the chicken in the fridge for an hour or so or overnight.
- Use a baking pan to add the already marinated chicken, pumpkin, broccoli, olive oil, lemon, garlic, oregano, salt and pepper. Use a wooden spoon to mix everything together.
- Bake at 350 F for about 45 minutes.
