Ingredients
- 2 tbsp olive oil
- 1 large onion
- 3 cloves of garlic
- 2 fresh hot peppers, seeded & finely chopped
- 1 spring of fresh thyme, finely chopped.
- 4 springs of fresh chives, finely chopped
- 2 springs of parsley, finely chopped
- 4 large tomatoes, peeled & chopped
- 1 lb prime ground beef, chicken or turkey.
- ¼ tsp fresh ground turmeric
- ¼ tsp ground fresh ginger
- ¼ tsp ground fresh cumin
- 1 tsp allspice
- ½ tsp ground cardamom
- Salt & pepper to taste
- ½-cup water or stock
- 5 lbs (2.5 kilos of green papaya halved and seeded.
- ½ cup grated cheddar cheese.
- ¼ cup Parmesan cheese.
Instructions
- Part I
- Brown the meat of your choice, rinse fat, and set aside.
- Heat oil in a large saucepan.
- Saute the onion, garlic, hot pepper, thyme, chives, parsley and tomato until soft.
- Add the meat, and all other spices.
- Season to taste with salt and fresh black pepper.
- Add water or stock & cook over medium heat for about 25 minutes or until all liquid has evaporated and the meat is nice and thick.
- Add rum just before removing pot from stove. Let cool.

- Stuffing the Papaya
- Preheat oven 350f or (180c)
- Spoon the meat mixture into the papaya shells.
- Put into a shallow roasting dish.
- Pour enough boiling water to reach about 1 inch (2.5 centimeters) up the sides of the shells.
- Bake in the oven for about 1 hour.
- Sprinkle with grated cheese and bake for another 30 minutes.
- Serve sprinkled with Parmesan cheese.
- Add hot sauce to taste (optional)
