Yiaourtopita translates to yogurt cake. It's a pound cake that is made with Greek yogurt & lemon zest.
Ingredients
- 1 ½ cups granulated sugar
- 1 cup unsalted butter (softened)
- 3 cups of all-purpose flour
- 3 large eggs
- 1 cup non-fat Greek Yogurt
- 3 tsp. baking powder
- 2 Tbsp. lemon zest (or zest of 2 lemons)
Instructions
- Preheat oven to 350 F.
- Sift flour. Add baking powder and lemon zest to flour, and set aside.
- Use a mixer to cream butter and sugar together for about two minutes or until light and fluffy. Gradually, add yogurt and then the eggs one by one, while you continue mixing.
- Reduce speed to low, and slowly add the flour into the butter while mixer is still running. When everything is mixed properly, turn off the mixer.
- Pour the cake batter into a greased Bundt or tube cake pan, and bake for about 45 minutes to an hour, or until the center is properly cooked.
- When the cake is done, brush a little butter on the top, and sprinkle powder sugar.
Notes
If you like a more lemony taste, add more lemon zest.
