Fresh zucchini, lean ground turkey, onions, mushrooms, carrots and red peppers make this nutritious meal a must try.
Ingredients
- 3 large zucchini
- 2 Tbs. olive oil
- 2.6 lbs. lean ground turkey
- 1 medium onion minced
- ½ cup finely diced carrots
- ½ cup finely diced red pepper
- 2 portobello mushrooms diced
- 2 tsp. fresh minced basil
- 2 tsp. fresh minced oregano
- 1 cup tomato sauce
- ½ cup white wine
- Sea salt and fresh ground pepper to taste
- A dash of pepper flakes (optional)
- ½ cup Mozzarella
Instructions
- Cut all zucchinis in half lengthwise to make 6 boats. Use a teaspoon to scoop out the pulp, leaving 1 inch on the shell. Cut the ends.
- Place the zucchini boats in a pan and cover with water. Bring water to a boil and cook the boats for about 5 minutes. Drain, and set aside.
- In a large skillet, heat the oil over medium heat and brown the ground turkey until cooked through for about 6 minutes. Remove the turkey from the skillet.
- In the same skillet, sauté onions until translucent, about 5 minutes. Add the carrots, red pepper, mushrooms, and reserved minced zucchini. Add the basil, oregano and ground turkey, and mix well. Add wine and cook for about 5 minutes. Add the tomato sauce and cook until vegetables are soft, and most liquid is evaporated., stirring often.
- Add sea salt and fresh ground pepper to taste. Add a dash of pepper flakes (optional).
- Preheat oven to 350F.
- Place zucchini boats on a baking pan. Fill each zucchini boat with the turkey mix. Sprinkle a little mozzarella on each one, and bake for about 20-30 minutes. Serve with rice or pasta of choice
