Ingredients
- 1 large butternut squash
- 1 tbsp olive oil
- 4-5 cloves of garlic
- 1 onion
- 1 inch of fresh ginger
- 1 (16oz can of coconut milk
- 1 lime (juiced)
- 2-4 cups of chicken broth (enough to cover the squash)
Instructions
- Peel and cut squash into large cubes
- Dice garlic and onion.
- In a large pot saute garlic, onion, & olive oil until translucent.
- Add squash, toss to coat.
- Add chicken stock and bring to a boil.
- Simmer for about 30 minutes until squash is tender.
- Puree with immersion blender or food processor.
- Add the coconut milk lime, salt and pepper to taste.
