Pumpkin pie
This is a Greek pumpkin pie that tastes good, and it is made with filo dough.

Ingredients
- 2 tbs olive oil
- 1 medium onion diced
- 2 cups of shredded fresh pumpkin , or 1lb 15 oz pumpkin puree
- 1 egg
- 1 tsp pepper
- Salt to taste
- A pinch of sugar
- ½ stick butter melted
- 1 lb phyllo dough room temperature
Instructions
- Preheat oven to 350 degrees
- Heat olive oil over medium heat, and saute the diced onions till translucent
- In a large mixing bowl, put the pumpkin pure, the cooked onions, egg, salt, pepper,sugar, and mix well.
- Grease the bottom of a baking pyrex (we used an 8x10 pan)
- Unroll phyllo and layer one sheet and brush with melted butter.Repeat until you have about 5-6 sheets total
- Spread ½ of the pumpkin mix evenly into the pan and repeat the layering process as above, with butter and 6 more sheets plus puree once more. Top with another 6 sheets
- Bake for about 40 minutes or until golden brown.
- Let cool before cutting.
