Ingredients
- 8-10 medium lobsters
- 2 Tbsp. olive oil
- 4-5 cloves of garlic (minced)
- 1 medium onion (minced)
- 12 oz. can of diced tomatoes
- 1 cup tomato sauce
- ¼ tsp. thyme
- Salt & pepper to taste
- A pinch of cayenne (optional)
- 2 Tbsp. of brandy
Instructions
- Boil lobsters for about 15-20 minutes but do not overcook. Allow them to cool.
- Carefully butterfly shells, remove the meat. Place shells on a serving platter & set aside. Mince lobster meat.
- Over medium temperature, heat oil. Sauté garlic, onion till soft. Combine minced lobster with onion & garlic, add diced tomatoes, tomato sauce, thyme, salt, pepper & cayenne.
- Simmer until liquid disappears and you have a thick consistency.
- Add the brandy, and mix well. Stuff lobster shells and serve.
