Meat filled baked Papaya

Meat filled baked Papaya

Ingredients
  • 2 tbsp olive oil
  • 1 large onion
  • 3 cloves of garlic
  • 2 fresh hot peppers, seeded & finely chopped
  • 1 spring of fresh thyme, finely chopped.
  • 4 springs of fresh chives, finely chopped
  • 2 springs of parsley, finely chopped
  • 4 large tomatoes, peeled & chopped
  • 1 lb prime ground beef, chicken or turkey.
  • ¼ tsp fresh ground turmeric
  • ¼ tsp ground fresh ginger
  • ¼ tsp ground fresh cumin
  • 1 tsp allspice
  • ½ tsp ground cardamom
  • Salt & pepper to taste
  • ½-cup water or stock
  • 5 lbs (2.5 kilos of green papaya halved and seeded.
  • ½ cup grated cheddar cheese.
  • ¼ cup Parmesan cheese.
Instructions
  1. Part I
  2. Brown the meat of your choice, rinse fat, and set aside.
  3. Heat oil in a large saucepan.
  4. Saute the onion, garlic, hot pepper, thyme, chives, parsley and tomato until soft.
  5. Add the meat, and all other spices.
  6. Season to taste with salt and fresh black pepper.
  7. Add water or stock & cook over medium heat for about 25 minutes or until all liquid has evaporated and the meat is nice and thick.
  8. Add rum just before removing pot from stove. Let cool.
  9. Part II
  10. Stuffing the Papaya
  11. Preheat oven 350f or (180c)
  12. Spoon the meat mixture into the papaya shells.
  13. Put into a shallow roasting dish.
  14. Pour enough boiling water to reach about 1 inch (2.5 centimeters) up the sides of the shells.
  15. Bake in the oven for about 1 hour.
  16. Sprinkle with grated cheese and bake for another 30 minutes.
  17. Serve sprinkled with Parmesan cheese.
  18. Add hot sauce to taste (optional)
