Mango cheesecake
Today we decided to make mango cheesecake, to celebrate mango season. There are so many mangoes on the trees, and we are getting inspired.

Mango cheesecake
Ingredients
- 1½ cups graham cracker crumbs
- ½ cup sugar
- 6 tablespoons butter, melted
- 4 large ripe mangoes, cubed
- 3 (8-ounce) packages cream cheese, softened
- 1¼ cups sugar
- 2 teaspoons vanilla extract
- 4 large eggs
Instructions
- Preheat oven at 325F.
- Use a large bowl to stir together graham cracker crumbs, sugar, and butter.
- Press cracker mix into bottom, and 1 inch up the sides of a buttered 9-inch springform pan. Bake for 12 minutes, then remove from oven and set aside.
- Puree mangoes in a food processor. Use a mixer to beat cream cheese, sugar,and vanilla together until smooth and fluffy. Add eggs one at a time, mixing well before each egg addition.
- Mix in mango puree.
- Pour batter into the baked crust. Bake at 325F for an hour and 25 minutes. Remove from oven, cool for an hour in pan using a wire rack . Then, cover and chill overnight or about 8 hours. Garnish & serve. Suggested garnishes: fresh mango slices, fresh berries, & fresh mint
