Ingredients
- 2 Boneless chicken breasts
- 3 large potatoes, peeled & quartered
- 10 baby carrots
- 1 tsp. dried oregano
- 1 tsp. fresh chopped thyme
- Sea salt to taste
- The juice of 1 lemon
- 1 tsp. Lemon zest
- ½ cup extra virgin olive oil
- ½ cup white wine
- 6 cloves of garlic
- Fresh ground pepper to taste
Instructions
- Preheat oven to 375 degrees.
- Place chicken, potatoes, and carrots in a roasting pan. Season with oregano, thyme, salt & pepper. Add the zest of half a lemon and half of the lemon juice.
- In a blender, place wine, oil, garlic and the other half of the lemon juice, and blend, until the liquid appears white.
- Pour wine-oil mix all over the pan and mix well.
- Place in the oven and bake for about 50 minutes. Make sure the chicken is cooked through and they has a roasted brown color.
- Allow 10 minutes to cool before serving.
