Gambas al ajillo – shrimp in garlic sauce
Yesterday, our friend Charles came over to the house for dinner, and he showed us how to make gambas al ajillo. An easy to make spanish dish, usually served as a tapa, made with shrimp, garlic and olive oil. We love learning something new. It’s already a family favorite.

Garlic shrimp Spanish style. It can be served as an appetizer or a main course. It is usually served as a tapa, but it can be served as a main course.
Ingredients
- 1 lb of jumbo shrimp (about 30-40 pieces) shells & tails removed
- ½ cup of olive oil
- 6 cloves of garlic minced
- 2 tbs of flat leaf parsley
- ¼ of tsp chopped habanero pepper or pepper sauce
- Sea salt
Instructions
- Preheat oven to 350 degrees
- In a baking dish, combine oil, garlic, peppers, parsley, salt, shrimp and mix well.
- Bake for about 20 minutes or until shrimp is pink and oil is hot. Do not overcook, and make sure there is lots of the picante oil in the pan to dip the bread as it is delicious.
- Serve with crusty bread or a baguette.

Here is what to look for when you buy shrimp.
Fresh shrimp is firm, with a rich grayish or green color and a clean, seafresh scent.
When buying frozen shrimp, make sure each of the pieces are individually coated with a thick layer of ice.
Try to buy shrimp with the shells left on-they keep better that way.
