Tomato bruschetta is a simple, but a very tasty appetizer to serve for any party. This year, our garden has been producing a great variety of tomatoes and we have been using them in all kinds of recipes. One of the things we love to make is bruschetta.

Ingredients
- Bread
- 1 6-oz loaf of French or Italian bread
- 1 Tbsp olive oil
- 6 round slices of mozzarella
- Topping
- 2 large plum tomatoes, minced
- 3 garlic cloves, minced
- 2 tsp minced fresh basil
- 1 tsp minced thyme
- 2 tsp olive oil
Instructions
- Preheat oven to 350 degrees.
- Cut the bread into 6 even slices, and place onto a cookie sheet.
- Brush each slice with olive oil, and add the mozzarella slices on top.
- Put cookie sheet in the oven and toast for 1-2 minutes.
- In the meantime, prepare the topping, by combining all ingredients, minced tomatoes, minced garlic, basil, thyme and the olive oil.
- Remove the bread from the oven and spread a teaspoon of topping over each slice of mozzarella and serve immediately.
