Eggplant spaghetti sauce

Eggplant spaghetti sauce  makes a great   substitute to meat sauce.

Ingredients
  • 3-4 garlic cloves minced
  • 1 small onion chopped
  • 2 tbs of olive oil
  • 1 large eggplant, ½ inch cubed
  • 12 mushrooms sliced
  • 16 oz pasta sauce
  • ½ cup of red wine
  • Salt & pepper to taste
  • A pinch of cayenne
Instructions
  1. In a large pan heat olive oil and over medium heat sautee onions till soft.
  2. Add garlic, and sautee for another minute or so.
  3. Add the cubed eggplant, toss to coat with oil, garlic and onion, and sautee for another 5 minutes.
  4. Add red wine, pasta sauce, salt and pepper. (Add a bit of water if you desire thinner consistency). Bring to a boil
  5. Simmer for about 10 minutes or so, until the eggplant is tender.
  6. Add the mushrooms and cook for another 5 minutes.
  7. Serve over pasta of your choice.
