Ingredients
- 3-4 garlic cloves minced
- 1 small onion chopped
- 2 tbs of olive oil
- 1 large eggplant, ½ inch cubed
- 12 mushrooms sliced
- 16 oz pasta sauce
- ½ cup of red wine
- Salt & pepper to taste
- A pinch of cayenne
Instructions
- In a large pan heat olive oil and over medium heat sautee onions till soft.
- Add garlic, and sautee for another minute or so.
- Add the cubed eggplant, toss to coat with oil, garlic and onion, and sautee for another 5 minutes.
- Add red wine, pasta sauce, salt and pepper. (Add a bit of water if you desire thinner consistency). Bring to a boil
- Simmer for about 10 minutes or so, until the eggplant is tender.
- Add the mushrooms and cook for another 5 minutes.
- Serve over pasta of your choice.
