Curry chicken
Ingredients
- 2 large boneless chicken breasts cut into ½ inch cubes
- 2 Tbsp. olive oil divided in half.
- 1 onion chopped
- 4 cloves of garlic minced
- 2 Tbsp. curry powder
- ½ to 1 cup of water
- 1 sweet potato cut into ½ inch cubes
- Salt & pepper to taste
- A dash of cayenne
Instructions
- In a large pan and over medium heat, use one tablespoon of oil to sauté chicken until cooked through.
- Remove the chicken and drain the fat from the pan.
- In the same pan, add the second tablespoon of oil and sauté the onions and garlic until translucent.
- Add back the chicken, the sweet potatoes, and water ( ½ to 1 cup) and continue cooking until the potatoes and the chicken are done, and desired curry consistency is achieved.
- Add salt, pepper, and a pinch of cayenne to taste.
- Serve with rice
