Curry chicken

We like to make curry chicken, but this is one of our favorite recipes.

Curry chicken
Ingredients
  • 2 large boneless chicken breasts cut into ½ inch cubes
  • 2 Tbsp. olive oil divided in half.
  • 1 onion chopped
  • 4 cloves of garlic minced
  • 2 Tbsp. curry powder
  • ½ to 1 cup of water
  • 1 sweet potato cut into ½ inch cubes
  • Salt & pepper to taste
  • A dash of cayenne
Instructions
  1. In a large pan and over medium heat, use one tablespoon of oil to sauté chicken until cooked through.
  2. Remove the chicken and drain the fat from the pan.
  3. In the same pan, add the second tablespoon of oil and sauté the onions and garlic until translucent.
  4. Add back the chicken, the sweet potatoes, and water ( ½ to 1 cup) and continue cooking until the potatoes and the chicken are done, and desired curry consistency is achieved.
  5. Add salt, pepper, and a pinch of cayenne to taste.
  6. Serve with rice
